Homemade chutney is something you should always have in your refrigerator to accompany any savoury dishes. It‘s so easy to make with regular pantry items!
Ingredients:
- some chopped dried fruits like apricots, figs, pineapple, raisins, cranberries…
- some white or rose wine of your choice
- some white/apple vinegar and sugar
- optional: some mustard seeds
Steps:
- In a thick bottom pan, throw in chopped dried fruits of your choice, pour in some white/rose wine until it barely covers the dried fruits.
- Add 1-3 Tbsp of vinegar and sugar to taste, then simmer on low heat for 10 min with lid open to evaporate alcohol in the wine.
- Taste to see if you like the sweetness or acidity and adjust by adding more vinegar or sugar.
- When the fruits have softened, throw in some mustard seeds (you can also crush half of them using a mortar and pestle) and simmer for another 10min until everything comes together. The texture should be soft and sirupy.
- Cool and put in a jar and keep in refrigerator. Serve with cheese plate or charcuterie board, or simply spread a layer in the bottom of cheese sandwich with brown bread. Yum!🤤
